Waffles are one of my go to, quick stand-by, emergency afternoon teas. They’re really easy to make so the kids can whip them up, they take about 5 minutes flat and we always seem to have all the ingredients hanging around. Plus it makes what would otherwise just be a normal afternoon feel a little bit special. They make the house smell really good, fill everyone up just enough to get through to dinner time and they’re shaped like hearts. Love, love, love.
This week we had a gigantic tub of (seemingly never-ending) natural yoghurt in our fridge, so you know what? I threw some into the batter for these waffles. Yay for yoghurt! If you don’t have yoghurt then you could just use some extra milk, or even sour cream, I bet that would be really good.
I don’t regret buying that huge 2kg tub of yoghurt for one minute (it was organic and surprisingly cheap, so really I was doing us all a favour) but it does mean that all week I have been saying things like ‘don’t forget about that yoghurt!’ or ‘why don’t you put some yoghurt on that?’ or ‘dessert tonight is anything you like…. with yoghurt’. Yoghurt for morning tea, a dollop on last night’s leftovers for lunch. Yoghurt has been going into cake mixes and breakfast bowls. Yoghurt with plums! Yoghurt with banana! Yoghurt almost coming out of our ears! And now waffles with yoghurt and figs…

makes 4 waffles : enough for breakfast for 2 or afternoon tea for 4
The yoghurt in these waffles makes them softer and a bit more cake like in their texture, so they keep better than a regular waffle and are still yummy in a lunchbox the following day.
2/3 cup buckwheat flour
1tsp baking powder
1 tsp ground cinnamon
1 tsp ground anise
1 tsp vanilla powder
2 tablespoons xylitol
3/4 cup natural yoghurt
1 tablespoon olive oil
1 egg
1/3 cup milk
Pop your waffle iron on to start heating up. In a medium bowl whisk together all the dry ingredients. Add in the egg, yoghurt, oil and milk, and whisk until the batter is smooth.
Once your waffle iron is at the right temperature, drop some batter in and cook until golden. My iron takes around half a cup of batter for each waffle and has a dial and a nifty light, so all I have to do is turn the dial right up almost to ‘darkest’ and when the light goes back to green I know they are ready!
Enjoy warm with a dollop of yoghurt, plus some figs and maybe a drizzle of honey or maple. An extra dusting of cinnamon would also be great, or some sliced banana or some chopped roasted nuts!
