Sometimes all you need is a little sunshine, a good tune on the radio, or the answer to a question you’ve been wondering about for a while. A little ray of hope, a signal of some kind; confirmation that whatever you have been doing, or whatever it is that you feel like you know (even if you can’t explain it), is right. An extra little reason to believe in yourself, and in your intuition.
These feelings might come from anywhere – a snippet of conversation, a walk in the fresh air or finally getting something done that you have been putting off for a long time. Sometimes your day can be turned around just by being reminded that how you look at things is the only way you can change how you feel about them.
And maybe the question you’ve been asking, you actually knew the answer to all along.
Life might not be perfect, but it’s got to be a whole lot better when we make the best of it we can and try to really live all the days, especially this one. Good things are coming, I can feel it.
If you can, take the chance to soak up a little sunshine; it might just put a little spring in your step and help you know that you’re on the right track.
half a fennel bulb, sliced
1 radish, thinly sliced
handful of rocket leaves
handful of lettuce leaves
a few mint leaves
a couple of sugar snap peas
a baby mandarin, sliced
half a fillet of hot-smoked salmon
for the lemon yoghurt dressing :
1 tbs natural yoghurt
a little drizzle of honey
juice and zest of 1/2 lemon
salt + pepper
Grab a few hands of green salad leaves, some herbs and a couple of fresh sugar snap peas. Give them a wash, and spin them dry. Wash and slice half a fennel bulb, saving any fronds if you have them. Wash and slice a radish. Cut the peas if you like, or not, it’s totally up to you.
Toss it all on to your favourite plate. Pop on the slices of mandarin and flake over the fillet of hot smoked salmon.
In a small bowl, mix together all the dressing ingredients until smooth. Fling a little over your salad. Sit in the window, or outside if it’s warm enough, and enjoy.
